Pumpkin Peanut Butter Delish-Balls
2 scoops vanilla protein powder
1 cup old fashioned oats
1/3 cup pumpkin puree
2 packets Justins All Natural Peanut Butter
1 TBSP pumpkin pie spice
1/2 TBSP cinnamon
5-10 drops vanilla stevia
Mix all ingredients together, roll into balls, put in a Tupperware & refrigerate.
Cookies & Cream
Protein Balls
1/3 cup natural
peanut/almond butter1/4 cup honey
2 scoops vanilla whey protein powder
2 tablespoons chia seeds
3 tablespoons dark chocolate chips
½ - 1 cup old fashioned oats (enough to thicken up the “batter”)
Mix all ingredients together, roll into balls, put in a Tupperware & refrigerate.
Turkey Spinach Meatballs (over Spaghetti squash):
-1 lb Italian seasoned Jennie-O lean ground turkey
-Liquid egg whites
-Whole wheat Panko
-2 cups Frozen Spinach (defrosted)
-Mrs. Dash Italian seasoning & Pepper to taste
I didn’t follow a recipe for these or keep very good track
of my measurements. I just eyeballed it until I got the right consistency to
roll into meatballs. I put the ground turkey in a bowl with the spinach and
seasonings. Added about 1 cup Panko to start, a little liquid egg whites and
mixed it around. Slowly added more Panko & Egg White until I got a good
consistency to work with. Rolled into little balls and plopped on a cookie
sheet. Baked for about 30 minutes at 350 degrees. My toddler LOVED these. They will be a staple in our home
going forward. What is great about these is you can make a big batch, then freeze them and pull out of
the freezer for a quick weeknight meal.
I served these over spaghetti squash. I just recently
discovered spaghetti squash and boy, am I glad I did! It totally satisfies my
craving for carbs – and it is quick & easy! One spaghetti squash cost about
$3 and makes enough to easily feed my family plus leftovers for me for a day or
two! If you’ve never cooked spaghetti squash the way I did it was cut it in
half, scoop out all the “guts” (like a pumpkin). Place face up in a microwave
safe dish with about an inch of water in it. And nook it in the microwave for
about 8-10 minutes. Once does in the microwave, use a fork and scrape out the
insides and place them in a big bowl.
Top with some salt free marinara sauce (I just get the
Sprouts brand) them plop meatballs on top! Delicious, fast, easy & nutritious family dinner!
